Our 1100 sq. ft. roasting and production facility in Bellevue, Nebraska, is where your caffeination begins. Since we don’t have a cafe for you to pop into, we’re opening our doors (virtually) to give you a behind-the-scenes look. Think of this as a front-row seat to the journey from green bean to your morning cup.
Only the best beans will do
Our offerings include single-origin beans and blends from coffee producing regions around the world, including Central and South America, Africa and Asia.
We select our beans through a process called “cupping,” where we roast and brew small batches to evaluate flavor and aroma. It might sound fancy, but honestly, it’s just a bunch of sniffing and slurping. It looks and sounds as silly as you’re probably imagining! It’s the best way to assess the unique qualities of each bean, from its taste to its body and mouth-feel, ensuring we only roast the finest.
We source some coffee directly from the farmer. For the rest, we work with Anthem Imports in Kansas City for a specially curated selection.
These 150-160 lb. bags arrive by pallet and are unloaded by hand—always a rewarding (and exhausting) day for the team.

All of our production roasting is done on our Diedrich IR12. It's about as bare bones as they come. No automation or bells and whistles. It's all sight, sound and smell...just the way we like it.
Our Diedrich 12kg roaster, built in Ponderay, Idaho, is a major step up from the 5kg Ambex we started with — nearly tripling our production capacity.
Each batch takes about 15 minutes from start to finish, and 20 lbs of unroasted coffee results in roughly 17-18 lbs of roasted coffee.






Part science experiment, part flavor quest
Roasting coffee sounds simple enough — heat the beans until they’re just right, then cool them down. Easy, right?
But here’s where the real fun (for the nerds among us) happens. Roasting is as much an art as it is a science. It’s about dialing in just the right profile to coax every bit of flavor potential out of each bean. From the first crack to the precise moment you drop the coffee out of the drum, countless variables come into play — origin, altitude, processing method, and even the quirks of the roaster itself. It’s a balancing act where the goal is always the same: to create a cup that’s as complex and vibrant as the beans’ story.

to your door
We roast to order, which means every bag of coffee is freshly roasted just for you — no sitting around, no shortcuts. After roasting, the beans take a quick trip through our trusty de-stoner to make sure no sneaky rocks or debris make it into your grinder or brew (it’s an agricultural product, after all).
From there, it’s all hands on deck: we weigh, fill, seal, sticker, and package each bag with care. Production days are full throttle here—roasting, bagging, and fulfilling orders all happens at the start of the week (Monday through Wednesday).
Once everything is ready to roll, we hit the road every Thursday, delivering fresh coffee across the Omaha metro and shipping orders nationwide. It’s our way of making sure your coffee is as fresh as it gets — straight from our roaster to your cup.

Cuppin’ Counter
We don’t have a brick-and-mortar café because our focus is on perfecting our roasting craft and supporting our café partners. However, we do offer a mini barista training station (complete with a struggling plant collection).
Here, our wholesale partners can drop by and refine their skills or ask any questions they may have. Equipped with a cute lil’ La Marzocco GS3 and all the essential brew tools, it’s the ideal spot for hands-on practice and learning.
Reboot Roasting is a self-funded family-run venture led by husband-and-wife duo Matt and Rachel Boshart. Matt focuses on the craft, carefully roasting each batch and handling the day-to-day operations — roasting, packing, and delivering every order.
